The following chapters suggest substitutions and economies and it is their purpose to enable one to obtain results without the waste of materials in experimental attempts in the home kitchen. Most of the recipes have been given to audiences on the slips used at demonstration lectures, but are here assembled for every day use. The recipes are not all original but have all been tested and in many cases slightly changed to meet personal methods and tastes.
